Wilton Cake decorating Course 3 – 1st and 2nd Day Update

I took the course 3 Wilton cake decorating classes in July. It’s about Fondant and Gum paste and how to apply them to create shapes, borders and flowers. I took it in Michaels in Lakewood, NY. They arranged four Wednesdays with 2 hours each to complete this class. They arranged it that way so that you have time to practice the techniques at home every 6 days.

This is the finished Calla Lilies I made after I learned how to make one on the second Wednesday of July. I also want to point out that the class requires you to get your own Wilton Course 3 Student Kit and Guide/Manual. I should show the fondant and gum paste tools that came with my kit next time. Winks.

The instructor let us choose either toothpick or raw spaghetti as sticks for our flower base/tips. I prefer using the toothpick in the picture above which are my finished Calla Lily base. I mixed a yellow gel icing to the white gum paste. I stick it on a styrofoam (wrapped in a foil inside the clear plastic cup) and when it turned hard candy, I brushed the tip with gum glue adhesive and roll it on the yellow sugar sprinkles. The manual tells you how to make a gum glue adhesive or you can just tear and make tiny balls with your gum paste and let it dissolve in a 1 tablespoon water.

These are my finished rose base. I used raw spaghetti for edible sticks on the rose base (made from gum paste). I made a couple of these on the first Wednesday. The Instructor follows the manual with hands-on demo.

These are my finished gum paste roses. It took 7 days for the rose tips to really get hard candy. On the second Wednesday, I learned how to add the petals on the tip. There are 15 petals in each rose. I enjoy making this flower the most! I love the way my roses turned out and the deep red color is what I wanted.

These are my finished Mum base. I learned how to made a couple of these during the first Wednesday.

These are my finished carnation base. I learned how to make a couple of these during the first Wednesday of the class.

This is my finished fondant ribbon or bow. Notice I didn’t mention gum paste. Yup, this is made of fondant. It took 2 weeks for the loops to completely get stiff or hard candy. Fondant takes longer time to get hard than the Gum paste. It’s also a sensitive medium than the gum paste.

  1. My grandma taught Wilton cake decorating for years. I know the basics but haven’t worked much with gum paste and fondant.

  23. Your pieces look beautiful! Looks like a professional. My grandma was a great baker/cake maker and my aunt had her own shop for the longest time. I never really got the baking gene. I like it, but I prefer cooking. My mom and I got that gene from my grandpa.
